Glenn & Cass Visit Moree

Food service identity and celebrity chef Glenn Austin took time out of his
busy schedule to further promote the culinary arts to a group of individuals
that are generally forgotten to us. A small school in Moree populated
predominantly by indigenous students in Outback NSW hosted Glenn for a day’s
culinary activities, the morning began as all others with roll call and the
announcement of the special guest. Glenn gave a brief talk to the students
explaining about the life of a Chef and what opportunities this career can bring to you.
He then went into the kitchen and started to prepare for his demonstration,
Glenn was accompanied by his wife Cassandra also an accomplished Chef. Cassandra
visited each class explaining the benefits of being a chef, answering questions
and offering encouragement as well as sharing nutritional knowledge on healthy
eating whilst giving the children a morning tea consisting of Cheese Stringers
and Poppers sponsored by Fonterra’s Bega and Mainland cheese. There is no such
thing as a straight cheese morning tea so Tuckers crackers came to the party and
donated all the health conscious crackers.
Whilst this was happening Glenn’s demonstration consisted of a chicken and noodle
dish, boning Ingham’s chickens and winding out fresh pasta gave the kids plenty
of entertainment whilst showing some cooking skills. Directly after the demonstration
the entire school was given a meal which was an unexpected bonus. None of this
would have been made possible if it wasn’t for the support of Glenn’s employers,
The Federation of Canteens in School (FOCiS) and the Australian culinary federation,
they made it possible with the generosity of Glenn’s time.
Fantastic food companies have made a commitment to continue supporting the ACF/FOCiS
