Get The Edge - Cut with the new GLOBAL-PRO


Yoshikin, the worlds leading expert in manufacturing chefs knives is introducing its latest knife technology to Australia and New Zealand. The GLOBAL–PRO series which until now has been sold exclusively in Japan supersedes the original GLOBAL series and has been undergoing testing on the Australian Culinary Olympic Team over recent months. The president of Yoshikin Mr. Hideyo Wantanabe recently visited Australia and provided us a sneak preview of the magnificently crafted 18 knife GLOPAL-PRO series at the Sydney Fine Foods exhibition. Mr. Wantanabe also presented the finalists of the Australian Culinary Federation Nestle Golden Chefs Hat a set to practice with.

With the introduction of the GLOBAL knife line in 1983, Yoshida Metal Industries (Yoshikin) led the world in the manufacturing and marketing of all stainless steel knives of one-piece construction with the establishment of the integrated handle and blade technology. The GLOBAL-PRO series has been designed specifically for professional use. All GLOBAL-PRO knives are manufactured through the "honbazuke", special blading process. After stamping the stainless steel blank into the shape of the blade, it is heat-treated at about 1000 degrees centigrade. After that, it undergoes the rapid cooling at minus 80 degrees centigrade. This "sub-zero treatment" increases the hardness of the blade, and the enhanced uniformity of the stainless steel's crystalline structure leads to the improved cutting qualities. After this "sub-zero treatment," the knife is once again passed to another heat treatment that takes about four hours. This tempering process makes the knife stronger, and tenacious.
